Banana Delight
- 2 cups granola – Use the one posted above in this blog. Whole Foods and Trader Joe’s have nice ones – choose according to flavor and tolerance for fat content
- 2 cups vanilla yogurt (non-fat is fine)
- 2 bananas, sliced
- 2 T shredded coconut
Relax. Do nothing.
Next Morning:
Mix. Serve. Eat.
NOTES:
This is a whole lot better and complex in taste than you would think. I was served a variation of this at the old Helmsley Palace Hotel in New York City. They used whipped cream rather than yogurt, and charged a breathtaking $22 for the dish, and this was 20 years ago. We liked it so much, I developed this simple variation, and it has been a favorite ever since. You can vary amounts to suit your taste.
