Overnight Oatmeal

This is my easiest breakfast, perfect for a cold morning. The oatmeal has a wonderful, silken texture.  It takes 2 minutes the night before, goes into the oven to cook all night, and is ready whenever you want it the next morning.

Follow this link to the recipe:
Silken Oatmeal
  • 3/4 cup oatmeal - steel cut, regular or quick cook
  • 3 cups milk
  • 1/2 tsp salt (optional)
  • 3 Tblsp brown sugar (optional)
  • 1/2 cup raisins (optional)
Night before:
Stir all ingredients together in an oven proof casserole.  Cover with foil, the put lid over that.  Put casserole in the oven at 190 degrees overnight.

Next morning:
Serve whenever you wish.

Notes:
  • For raisins, substitute chopped apples, dried blueberries, dried chopped fruit, dried peaches, chopped peaches or pears, or any other fruit you can think of.
  • Stir in a cup of applesauce as a substitute for one cup of milk
  • Stir in a half cup of nuts or wheat germ or both
  • Substitute honey, white sugar, maple syrup or other sweetener fo rbrown sugar
  • Add cinnamon, ginger, vanilla extract, almond extract or other flavoring
  • Stir in berries or nuts or chopped fruit when you serve it. For a less-good-for you traditional Irish topping, pour on a little cream and sprinkle with brown sugar.
