Spiced pumpkin oatmeal

Like eating pumpkin pie … sorta. It takes 2 minutes the night before, goes into the oven to cook all night, and is ready whenever you want it the next morning.

Follow this link to the recipe:

Spiced Pumpkin Oatmeal

• 3/4 cup oatmeal - steel cut if possible, or regular will do
• 3 cups milk
• 1 cup canned pumpkin (not pumpkin pie mix)
• 1/2 tsp salt (optional)
• ½ tsp nutmeg
• 1 tsp cinnamon
• 3 Tblsp brown sugar
• 1/2 cup chopped pecans

Night before:
Stir all ingredients together in an oven proof casserole. Cover with foil, the put lid over that. Put casserole in the oven at 190 degrees overnight.

Next morning:
Serve with maple syrup to pour over it.

Notes:
• Substitute walnuts or chopped almonds for the pecans.  May add more than 1/2 cup
