Delicious muffins bake in the morning while you get ready
• 2 cups flour
• 1 T baking powder
• ½ tsp salt
• ¼ cup sugar
• ½ cup applesauce
• 1T melted butter
• 1 egg, beaten
• 8-ounce carton of lemon yogurt
• 1 tsp lemon extract, or vanilla if you wish
• 1 cup blueberries
Night before:
Set oven to preheat to 400 degrees in the morning
Mix the first 4 ingredients in a large bowl
Mix the rest of the ingredients in a second bowl, and refrigerate
Line 12 muffin cups with paper, or grease
Next morning:
Pour the wet ingredients into the dry ingredients, and mix until the dry ingredients are barely gone. Do not over mix, or the muffins will be tough.
Spoon the batter into the cupcake papers, dividing it evenly amongst the 12. Sprinkle a little sugar on the top if you wish.
Bake at 400 degrees for about 20 minutes, or until done.
NOTES:
Let cool for a few minutes before peeling, or the muffins will stick to the paper.
