Tasty, really fast, ready when you are.
Peach Almond Oatmeal
- 3/4 cup oatmeal - steel cut if possible, or regular will do
- 4 cups milk (use only 3 cups if regular oatmeal)
- 3 Tblsp sugar
- 1/2 tsp salt (optional)
- ½ cup dried peaches, snipped with scissors into ¼ inch pieces
- 1/2 cup sliced almonds
- 1 tsp almond extract (optional)
Night before:
Stir all ingredients together in an oven proof casserole. Cover with foil, the put lid over that. Put casserole in the oven at 185 degrees overnight.
Next morning:
Serve with milk poured over it.
Notes:
- Substitute any dried fruit for the peaches – apricots or cherries work especially well
