French Toast with Strawberries



Light, filling, quickly made with ingredients on hand.  Very good with strawberries, or with just a bit of butter and syrup.

French Toast with Strawberries
  • 8 slices whole wheat bread
  • Two eggs, beaten well
  • 1 cup milk
  • ¼ tsp salt (optional)
  • 2T sugar (optional)

Night before:
Slice one pint of strawberries and store in the refrigerator.
  
Next morning:
Heat griddle or frying pan on medium heat for 5 minutes, then grease with oil or butter.
Mix all but bread, then pour the mixture on a dinner plate.  Lay a piece of bread onto the mixture, then turn over and wet the other side.  Put directly onto the griddle.  Repeat with other bread until griddle is filled.  Do not dip any more, or it will soak up the entire mixture.
Once all are cooking, distribute any leftover mixture onto the uncooked side of the bread – it will absorb it.

NOTES:
  • You can use more milk than a cup if you wish, or add another egg.  Experiment to see what texture you like.
  • The French toast is delicious served without any fruit as well, covered with butter and syrup.
