Stuffed Ciabatta


Hot, tasty, gooey and filling.  Very easy, and prepared completely the night before.  What more could you ask for a cold winter morning?

Stuffed Ciabatta

  • 4 ciabatta rolls, split
  • 1 cup grated cheddar
  • ½ cup cottage cheese
  • 1/3 cup crumbled fried bacon (4 slices)
  • 1 tsp each lemon juice and Worcestershire
  • 1 T mayonnaise
  • 1 T chives

Night before:
Pull a little bread from the inside of each roll
Stuff each roll with ¼  of the cheese mixture
Wrap each in foil and refrigerate
Set oven to preheat to 400 degrees.
Next morning:
Put the rolls on a cookie sheet, opening the foil to expose the top of the each roll, but leaving foil covering on the sides and bottom.
Bake for 15 minutes, or until cheese is melted.  Let sit 5 minutes before serving.

NOTES:
Add chopped green olives, chopped  roasted peppers, chopped nuts, anything else that takes your fancy.  Can use other rolls as well, but make sure they are the same size.  Very versatile.
