* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Golden Cornmeal Pancakes


 Hearty, stick to your ribs pancakes.  These are actually better if you make the batter the night before - it is less grainy in texture.  Quick to cook.

Golden Cornmeal Pancakes
  • 3/4  cup flour
  •  1/2  cup cornmeal
  • 1/4 tsp salt
  •  1 tablespoon baking powder
  •  1 egg
  •  1 cup milk (add another Tablespoonful or two if the batter is too thick)
  • 2 T. olive oil
 Night before:
  Combine the first 4 ingredients in a bowl, whisking until combined. Break the egg into a separate bowl, beat well, then add in the milk and oil and stir to combine barely.  The batter will be lumpy.  Store in a covered container in the refrigerator.

Next morning:
Grease and heat the griddle, then cook pancakes 3 minutes on each side, or until browned.    Serve immediately.  

NOTES:
  •       These are great with butter and honey, or with maple syrup.
