Fried Polenta



    

A variation on regular pancakes - you fry slices of chilled polenta, and treat them like pancakes, serving with butter and syrup, or fruit, or whatever else you fancy.  They are perfect for a cold winter day, giving you fuel and warmth to take on the day.

Easy Breakfast Polenta


  • 2 cups polenta (see Easy Breakfast Polenta 10/25/2012)
  • Butter


Night before:
  

After fixing Easy Breakfast Polenta, take 2 cups and spread along the width of a piece of foil.  Make sufficiently thick to make a roll with a 2 inch diameter.  Put roll in refrigerator to firm up.

Next morning:

Slice roll in ¾ inch slices, and fry in butter until browned on each side.  Serve with butter and syrup.

NOTES:

  • Warm plates and syrup  before serving.
