* Bread machine
* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Potato Scramble




Hot and hearty for the dark, cold mornings of winter.

Potato Scramble

  • 2 cups frozen  Potatoes O'Brien
  • ½ cup chopped ham
  • 4 eggs, beaten
  • salt and pepper to taste


Night before:
  Prepare potatoes per package directions, then cover and let stand overnight.
  
Next morning:
  Put ham in pan with potatoes, and sauté until potatoes and ham are hot.  Pour in beaten eggs and stir as they cook.   Serve immediately after eggs are fully cooked.
 
NOTES:

  • If you have some spare sautéed onions, add those.  Or green peppers.
  • If you can't find frozen O'Brien potatoes, any frozen home fries or hash browns will do.  Or peel and chop raw potatoes, but that isn't particularly quick.
