Apple walnut pancakes

Honey crisp apples and walnuts make these a real treat.

Follow this link to the recipe:
Apple walnut pancakes

  • 1 cup flour
  • ¼ tsp salt
  • 2 tsp baking powder
  • ¼ cup brown sugar
  • 1Tblsp canola oil (optional)
  • 1 egg
  • 1 cup milk
  • 1 cup chopped unpeeled apple
  • ½ cup chopped walnuts

Night before:
Put first 4 ingredients in one bowl and mix until blended.
Put oil, egg and milk in a second container – beat together, then stir in nuts and apples and put in refrigerator.

Next morning:
Grease surface of griddle or frying pan, then heat.  Pour wet ingredients into dry; mix until all barely moistened.  Ladle onto cooking surface, cook until done, turning once.  Serve with butter and syrup.  Or serve with my favorite, butter and sugar.

This makes about 10 pancakes

NOTES:
Substitute chopped peaches or pears or most any other fruit for the apples.
