There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Eggs on potato pancakes




I am working on using leftovers for breakfast.  In this case, we had mashed potatoes for dinner.  I took the leftovers, shaped them into disks, and put on waxed paper in the refrigerator. The resulting potato pancake with a fried egg was hearty and filling.  My husband REALLY liked it.

Eggs on potato pancakes
½ cup leftover mashed potatoes per person.   Add chives or flavored salt or any herb of choice.
1 egg per person
1T butter

Night before:
Form mashed potatoes into hamburger sized patties.  Refrigerate.
  
Next morning:
In a large non-stick pan, melt the butter, and fry the pancakes.  Turn after about 2 minutes, when underside is browned.  Make sure there is butter under the pancake when you turn it, or it will stick.  Put the pacakes on a plate, and cover with foil. 

Fry the eggs.

Serve on top of the pancake.

NOTES:
If your pan is fairly large, add the eggs when you turn the pancakes, and cut down on the cooking time..
