There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

* Crock pot
* Bread machine
* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Healthy Banana Cookies




Amazingly, these can be made with only two ingredients, AND are a good way to use overripe bananas.  Great texture, no added sugar, very good.  I add nuts for a bit of crunch.

Healthy Banana Cookies

  • 2 medium ripe bananas, mashed. Very, very ripe is best.
  • 1 cup of uncooked oats (quick or regular, but not steel cut)
  • 1/4 cup finely chopped nuts


Night before:  
Set oven to come on at 350°F in the morning. 
 Spray a non-stick cookie sheet with cooking spray or use a Silpat.

In the morning:
Combine the mashed bananas and oats in a bowl. Fold in the walnuts and place a tablespoon of each on the cookie sheet.
Bake 15 minutes.   Serve warm.
 Notes:Add any or all of the following:

  • 1T sugar
  • vanilla
  • cinnamon
  • egg
  • mini-chocolate chips
