Scandinavian Oatmeal Pancakes







Hearty, tasty and good for you.  Start the night before, grill in the morning.

Scandinavian Oatmeal Pancakes

  • 2 cups rolled oats
  • 2 cups buttermilk
  • 112 cup flour
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 eggs, beaten
  • 1/4 cup melted butter


Night before:
Combine the oats and buttermilk in a bowl and mix well.  Cover and put in the refrigerator overnight.  Mix the flour, sugar, baking powder, baking soda in a second bowl. 

In the morning:
Mix the flour mixture into the oat mixture, then add the eggs and melted butter, stirring until well mixed. 

Pour the desired amount  of batter onto a hot griddle, cook until brown on both sides, turning once.  Serve immediately.

Notes:
·         Serve these pancakes dusted with cinnamon sugar or spread with honey.
·         Good with grated of apple or blueberries added before baking.
