There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

Almost Omelet - serves 4

I love omelets, but they are way too much trouble for a weekday breakfast.  This gives you the taste and flavor, but not the fussy cooking and filling and folding.

Almost Omelet
  • 2 tsp butter, or canola oil
  • 5 large eggs, beaten with 1 Tbsp of water or milk
  • 1/4 cup of chopped ham
  • 3 scallions, chopped
  • 2Tbsp of cheddar or other favorite cheese, shredded
Night before:
No work at all, unless you want to chop the ham and scallions

Next morning:
Put a non-stick skillet on the burner on medium high heat, and melt butter.  Add ham and scalions, stir fry for 2 - 3 minutes
Beat eggs with water, turn burner to medium, and add eggs to skillet.  Stir occasionally until set, about 4 minutes.
Serve and top with cheese.

Notes:
Variations: Ingredients fall into 3 categories for this:
  1. Things that need to be cooked before the eggs are added, and could include bacon bits, onions, green  peppers, raw shrimp(chopped), and most anything else that you put in an omelet
  2. Things that need to be warmed - add these when the eggs are largely cooked.  This includes chopped tomato, chopped avocado, cooked tiny shrimp, fried and crumbled turkey bacon, feta  cheese, black beans, smoked salmon  and more 
  3. Things to top it with, such as cheese, salsa, fresh chives or dill
I have a ScanPan skillet that I love - it is non-stick, but you can use metal implements on it (I don't - long habit of using non-metallic implements.  It is expensive, but worth it.


You can buy ham chopped, and cheese grated.  I often say, "Well, it would be so easy and so much cheaper to do it myself", then I buy it anyhow.  When I am bleary eyed and trying to think in the morning, I appreciate it.
