* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Potato Pancakes

These are hearty and very tasty.  Make mashed potatoes the night before for dinner, then plan for some leftovers for this yummy treat a couple of days later.

Potato Pancakes
·         2 pounds small red potatoes
·         Sour cream, butter, milk
·         1 egg
Night before:
  Scrub potatoes well, then boil for 20 minutes.  If any are larger than a golf ball, cut in half or quarters.
  When potatoes are done, dump onto a plate, add 2T butter (more or less to taste), and ¼ cup of sour cream.  Mash coarsely with a fork, leaving the skin to mix in with the potatoes.  Salt to taste.  Serve at dinner.  Make sure you have left overs

Next morning:
Take 2 cups of cold potatoes, more or less, and mix in one egg.  Form into patties, and fry in a little butter or safflower oil until lightly browned.  Serve with butter, or jam or syrup if you like.  Goes well with fried eggs.

NOTES: 
  •    Grate a little onion into the cold potatoes for additional flavor
  •  May add extra egg for more protein
