Easy Apple Upside-Down Cake



A scrumptious way to use the great apples out there right now.  Special occasion only, maybe on a weekend, as this is heavy on sugar.  But SOOOO yummy.  Don’t be afraid of the cake from scratch; it is really easy.

Easy Apple Upside-Down Cake

Topping (Bottom?):
  • 2 Granny Smith Apples, sliced or chopped in ½ inch pieces.
  • 3T butter, melted
  • ½ cup brown sugar

Cake:
  • 1 cup flour
  • ¾ cup sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 1 egg, beaten
  • 1 tsp vanilla
  • ¼ cup butter

Night before:
  
Topping: Grease an 8” or 9” cake pan.  Melt topping butter and pour in a pan.  Sprinkle brown sugar over melted butter in the pan.  Arrange apples, or just throw them in the pan.  Refrigerate overnight
 
For Cake: 
  Mix first 4 dry ingredients in a bowl, set on counter overnight
  Mix milk, egg and vanilla and put mixture in a covered container in the refrigerator
  Measure butter into a glass bowl 
  Set oven to come on in morning, 15 minutes before you get up, at 375°

Next morning:
  Melt butter for cake
  Add milk mixture to dry ingredients, stir briefly, then add melted butter.
  Spread batter over apples in the pan, trying not to disturb the brown sugar and apples in the pan.
  Put in oven to bake at 375° for 20 – 25 minutes
  Take a shower and get dressed.
  Take pan out of oven and invert onto a flat plate.  Pull pan away, scraping out any topping left in it and putting on the cake
  Cut and serve


NOTES:  Pineapple slices work well too, but I like the tartness of the apples
