Easy Banana Nut Muffins



Stirs up quickly, and excellent complete meal.

Easy Banana Nut Muffins
  • 1 ½ cup mashed banana (about 2 bananas)
  • 1 egg
  • 1 /2 cup of milk
  • 2T canola or safflower oil
  • 2 cups flour
  • ½ cup sugar
  • 1T baking powder
  • ½ tsp salt
  • ½ cup chopped pecans

Night before:
Mix first 4 ingredients in a large bowl.  Cover and refrigerate.
Mix dry ingredients in a smaller bowl.  Cover and leave on counter overnight.
Set oven to come on at 350° in the morning.
Grease 12 muffin cups, or line with paper liners.

Next morning:
Pour dry ingredients into wet, and mix until barely moistened.  It will be lumpy, and that is better than tough muffins.  Spoon into prepared pans, and bake for 18 minutes until firm.  Remove and serve while still hot.



NOTES:
  • Add ¼ cup wheat germ for additional nutrition.
