* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Sweet Potato Pancakes




Extra fiber and veggies in your morning pancakes.  Delicious with a  butter/brown sugar topping.

Sweet Potato Pancakes

Medium size sweet potato, for 1 cup mashed, more or less
2T oil
2T sugar
1 egg
1 ½ cups milk
1 ¼  cups flour
¼ tsp salt
½ tsp each of cinnamon and nutmeg
2 tsp baking powder

Night before:
 Pierce sweet potato with fork in several places, then microwave for 6 minutes or until soft.  Let cool, then remove skin, and mash the flesh

Mix first 5 ingredients together well in large bowl, and refrigerate overnight.  Mix last 4 in another bowl and cover.

Next morning:
Heat griddle.  Pour dry ingredients into wet, mix until barely combined (some lumps are fine). Spoon onto griddle, and cook until done, turning once.  Serve immediately.


NOTES:
·         For butter brown sugar topping, mix ¼ cup brown sugar with 2T soft butter
·         Maple syrup is also good with these
