This is really tasty and simple, and for some reason, children are fascinated by it.
Toad in a hole
- 4 pieces whole wheat bread
- 4 eggs
Night before:
Nothing to do
Next morning:
Lightly butter bread on one side. Cut hole in center of bread with biscuit cutter or glass. If you have room, fry circles while eggs are frying, otherwise do before cooking the eggs.
Melt butter in a large, non-stick skillet, and put the four slices of bread, butter side up, into the skillet. Cook for a minute, until lightly browned, then turn over, and break an egg into each hole. Lower the heat to medium, and cook until egg white is set.
NOTES:
- I have always known these as toad in the hole, but research shows TITH should have sausage in it too. Was fascinated by the other names – it is also known as Rocky Mountain toast, egg-in-a-basket, moon egg, egg-in-the-hole, one-eyed Jack, bird's nest, gas house eggs, the Elephant Egg Bagel, frog in a hole, camp eggs or camper's eggs, bull's eye, egg in bed, eggy-in-a-bready, moon toast, Moon over Miami, Popeye, and Cowboy Eggs.
