Cheddar Scrambled Eggs Florentine
· 1 tsp butter
· 4 large eggs, beaten
· ¼ cup cheddar cheese
· 1 cup raw baby spinach
Night before:
Nothing to do
Next morning:
Heat butter in the pan, pour eggs into the pan, stir occasionally until very soft set. Toss in spinach and cheddar, and stir occasionally until eggs are set, spinach is wilted, and cheese is melted.
NOTES:
· Very quick, great served with whole wheat toast
· Vary cheese type to taste
