There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

* Crock pot
* Bread machine
* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Easy Coconut Pie



Stay with me here – milk, eggs, fiber.  This is easy, yummy, a bit more sugar than I usually want, but definitely a winner.

Easy Coconut Pie
·         1 ¾ cup buttermilk, or regular milk if you want
·         4 eggs
·         1 tsp vanilla
·         ¼ cup (half stick) of butter, or use canola oil (less flavor, a bit healthier)
·         ¾ cups sugar
·         2/3 cup Bisquick (I use the heart healthy one)
·         ¾ cup flake or shredded coconut

Night before:
  Toss all ingredients into a blender, in the order listed.  Blend for 3 minutes on high.  Put blender in refrigerator overnight. Grease a pie pan (deep 9”) or two smaller pans.  Set oven to come on at 375° about 15 minutes before you get up

Next morning:
Get up and go straight to the kitchen.  Blend for about 2 seconds, then pour into prepared pan, and put into the oven.  30 minutes later – fresh baked pie.

NOTES:
·         This would work without the coconut as well.  I would put cinnamon or nutmeg in for some flavor.  Or more vanilla.
