* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender

Maple Walnut Blueberry Oatmeal


Walnuts!  Blueberries! Oatmeal!  Could it be any healthier?  This takes 2 minutes the night before, goes into the oven to cook all night, and is ready whenever you want it the next morning.

Maple walnut blueberry oatmeal
  • 3/4 cup oatmeal - steel cut, regular or quick cook
  • 3 cups milk
  • 1/2 tsp salt (optional)
  • ½ cup of walnuts, chopped.  Toast at 350 degrees for 10 minutes for more flavor
  • 1 cup blueberries, fresh if available. 
  • Maple syrup
Night before:
Stir oatmeal, milk and salt (and dried blueberries if using) together in an oven proof casserole.  Cover with foil, the put lid over that.  Put casserole in the oven at 180 degrees overnight. 

Next morning:
Serve oatmeal into bowl, top with walnuts and blueberries, then pour maple syrup over to taste.

Notes:
  • Can use dried blueberries.  Stir in with oatmeal and milk before cooking.
