Miraculous Pumpkin Muffins

Unbelievably simple.  Unbelievably.  When a friend told me about this, I was skeptical that it could possibly work.  Surely it needs eggs and oil and liquids.  But no, it doesn't, and it turns out tasty, moist, flavorful, lowfat muffins.  Try it just as written - you will be amazed!

Follow this link to the recipe:

Pumpkin Spice Muffins

1 box spice cake mix (Betty Crocker makes one)
1 can pumpkin (15 - 16 ounces).  Don't use pumpkin pie mix.
3T water

Night before:
Set oven to come on at 350degrees, 15 minutes before you get up.  Grease muffin tins.

Next morning:
Stir together the 3 ingredients, spoon into well greased muffin tins and bake at 350 degrees for 20 minutes. Makes 18 muffins.

NOTES:
·         Are these not amazing?  What other fruit/cake could be mixed the same way?  Applesauce and spice cake comes to mind.  Others?
