Cherry Almond Bread


Make this scrumptious bread the night before, and enjoy it in the morning.

Cherry Almond Bread

• 1 cup water
• ½ cup sugar (divided use if use fruit bread cycle – see notes)
• 1/2 tsp salt
• 2 eggs
• 2 tsp almond extract
• 4 T butter, softened
• 3 1/4  cups bread flour
• 2 tsp dry yeast
• 1 cup dried cherries
• ½ cup chopped almonds
• 4 oz almond paste

Night  before:
Add the ingredients to the bread machine in the order listed.  Press the start button before you go to bed.  (I do not put any bread with raw eggs on the timer, but rather cook it when we go to sleep, and reheat if it has gotten cold)

Next morning:
Take the bread out of the machine and out of the container.  Place on a cookie sheet and rewarm in the oven.  Slice and serve with cottage cheese, yogurt, or butter and jam.

NOTES:
The cherries and nuts may get well chopped up.  You may, if you wish, use the “fruit bread setting” and put the fruit, nuts, almond paste and half the sugar in at the signal from your breadmaker for adding fruit.   This will yield more chunks in the bread, but will require you to stay up to do that.  I vote not.
