Title Tropical Cereal Bars

These are very good for you, incredibly tasty, and a great snack to grab on the go (although we ARE trying to have breakfast with the family).   They have fruit, fiber and protein.  AND they are easy to make the night before.  I recently took these with me on a trip to India, and ate them when I felt like a taste from home.
Follow this link to the recipe:

Title Tropical Cereal Bars
·         2 eggs
·         1/2 cup maple syrup
·         1 tsp vanilla extract
·         ½ tsp salt (omit if used salted nuts)
·         1 ½ cups of mixed nuts, chopped
·         3 cups Cheerios
·         1 ½ cups DRIED chopped mixed tropical fruits
·         ¼ cup whole wheat flour

Night before:
These should be made entirely the day before.
1.      Preheat oven to 325 degrees
2.      Line a 9 X 13 pan with parchment paper
3.      Mix first 4 ingredients, beating until smooth
4.      Mix the nuts, cereal, fruit and flour
5.      Pour the wet ingredients into the dry, and mix thoroughly
6.      Spoon the mixture into the prepared pan, then push down firmly with your knuckles until the mixture is well packed and flat
7.      Bake 45 minutes, or until they look and feel dry on the top
8.      Take out of oven and cut into bars immediately, but leave in the pan.
9.      Let cool completely.

Next morning:
Cut squares again if needed, then serve.

  1. Good sounding recipe. It is terribly cold here and I'm staying inside, so I thought I would look for new recipes to try. I like to make things in my toaster oven.
