There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

* Crock pot
* Bread machine
* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Pineapple Coconut Macadamia Nut Energy Bars



A taste of the islands!  These are very good for you, incredibly tasty, and a great snack to grab on the go (although we ARE trying to have breakfast with the family).   They have fruit, fiber and protein, although not particularly low calorie.  AND they are easy to make the night before.

Pineapple Coconut Macadamia Nut Energy Bars
·         2 eggs
·         1/2 cup coconut syrup (maple will do if you can’t find this)
·         1 tsp vanilla extract
·         ½ tsp salt (omit if used salted nuts)
·         1 ½ cups of chopped macadamia nuts
·         2 cups wheat flakes, crushed
·         1 cup quick cook oatmeal (uncooked)
·         1 cup flaked coconut
·         1 ½ cups DRIED pineapple, chopped
·         ¼ cup whole wheat flour


Night before: 
These should be made entirely the day before.
1.      Preheat oven to 325 degrees
2.      Line a 9 X 13 pan with parchment paper
3.      Mix first 4 ingredients, beating until smooth
4.      Mix the nuts, cereal, coconut, fruit and flour
5.      Pour the wet ingredients into the dry, and mix thoroughly
6.      Spoon the mixture into the prepared pan, then push down firmly with your knuckles until the mixture is well packed and flat
7.      Bake 45 minutes, or until they look and feel dry on the top
8.      Take out of oven and cut into bars immediately, but leave in the pan.
9.      Let cool completely.
  

Next morning:
Cut squares again if needed, then serve.
