Peach Crisp


Fresh peaches are perfect for a morning in the summer (see the surfers in the background?)  Pop it in the oven, set to come on in the morning, and have hot peach crisp ready to go when you are.

Peach Crisp

• 5 large peaches, peeled and sliced, or 1 16 oz bag frozen peaches
• 1 tsp almond extract (optional)
• 1 cup quick oatmeal, uncooked
• ¼ cup packed brown sugar
• ¼ cup butter (half a stick)

Night  before:
Put the peaches into an 8X8 ovenproof casserole.  Sprinkle with almond extract
Melt the butter in the microwave, then mix with oatmeal and brown sugar in a bowl.
Sprinkle the oatmeal mix over the peaches, and place the casserole in the lower third of the oven.
Set the oven to go on in the morning at 350 degrees, and to cook for 40 minutes.

Next morning:
Serve.

NOTES:
Substitute 2 T of canola oil for 2T of butter, if you wish a slightly healthier fat.  You will lose some flavor.

Add a small package of frozen raspberries for Peaches Melba Crisp.  Also wonderful!
