Taco Scrambled Eggs

Last night we had tacos - a family favorite.  There was just a little bit of everything left - meat, veggies, cheese.  Not enough to do anything with, and the avocados were browning a bit.  So I tossed it all in a nonstick skillet this morning, lettuce and all, sauteed it briefly, then poured 3 beaten eggs over it.  Yummy!

Easy Breakfast Polenta

This is hearty and warm for a winter day.  It is also known by the inelegant name of cornmeal mush, but the Italians co-opted this and called it polenta.  This is enough to serve 4, as well as to have leftovers used for friend polenta - see next week's posting.

Steak N Eggs

We had steak for dinner, something we don’t do very often.  I smothered them with onions.  Wanting to prolong the pleasure, I saved some out for breakfast the next day.  You can do this with a variety of leftovers, but this one was particularly good.

Pecan Pie Oatmeal

Pecans float to the top and get toasted a bit, making a tasty, filling oatmeal.  Lovely even on a summer day. If you crank the air conditioner up…

Grits Souffle

Real grits souffle has separated eggs, and lots of whipping and is a great deal of trouble.  This gives you the same taste in no time at all.  Innately quick, lots of protein and carbohydrates in one dish. And did I mention delicious?

Peaches of Summer in Winter

Some of us are snooty about fresh fruit, and I am among them.  But a little research shows that canned fruit is very close in nutrition to fresh.   And this is so easy and so GOOD.

Raspberries and cream oatmeal

Wonderful taste combination.  So probably better for you with milk than with cream, but a tablespoon or two of cream won’t do permanent harm.  Try it!
