* Griddle that spans two burners on your stove
* Toaster oven
* Blender

* Food Processor

Apple Pie Oatmeal

Tasty, filling, make it in 5 minutes in the evening, let it cook all night, then serve whenever you want to.

Apple Pie Oatmeal
  • 3/4 cup oatmeal - steel cut if possible, or regular will do
  • 3 cups milk (use only 2 cups if regular oatmeal)
  • 1 cup apple juice
  • 4 Tblsp brown sugar
  • 1/2 tsp salt (optional)
  • 1 tsp cinnamon
  • 1 large apple, cored but unpeeled, chopped
  • 1 tsp vanilla paste or vanilla extract 
 
Night before:
Stir all ingredients together in an oven proof casserole.  Cover with foil, the put lid over that.  Put casserole in the oven at 185 degrees overnight. 

Next morning:
Serve with a small amount of cream poured over it.

Notes:
  • Maple syrup instead of cream, or in addition to if you are looking for more calories, is luscious.
  • Can use pears in place of apples for a different taste.
