Taco Scrambled Eggs




Last night we had tacos - a family favorite.  There was just a little bit of everything left - meat, veggies, cheese.  Not enough to do anything with, and the avocados were browning a bit.  So I tossed it all in a nonstick skillet this morning, lettuce and all, sauteed it briefly, then poured 3 beaten eggs over it.  Yummy!

Eggs on potato pancakes




I am working on using leftovers for breakfast.  In this case, we had mashed potatoes for dinner.  I took the leftovers, shaped them into disks, and put on waxed paper in the refrigerator. The resulting potato pancake with a fried egg was hearty and filling.  My husband REALLY liked it.

Cottage Cheese Pancakes


The raspberry guy was at the farmers market this week, with red and golden raspberries, and blueberries as well.  Way too good to resist.  So I stirred up some high protein, creamy, cottage cheese pancakes, and topped them with the berry bonanza.  Really easy and luscious.

Southwestern Scrambled Eggs - way too easy

This was an accident.  I meant to buy Egg-Beaters, but grabbed the Southwestern version instead.  It has peppers and onions in it.  So I just melted a little butter (or be more virtuous and use olive oil) and cooked the eggs, adding a little pepper.  Yummy, and I didn't miss the yolks at all.  Try it - super easy.

Steak N Eggs


We had steak for dinner, something we don’t do very often.  I smothered them with onions.  Wanting to prolong the pleasure, I saved some out for breakfast the next day.  You can do this with a variety of leftovers, but this one was particularly good.
