Tropical Overnight Oatmeal

Somehow tropical and oatmeal seem to be an oxymoron, but this is really good, and somehow lighter than most oatmeal    Ready to eat when you want it.

Walnut Berry Oven Oatmeal

There is something about the tart berries, crunchy walnuts and brown sugar that makes this a sublime concoction.  Way too easy, and ready when you want it.

Peach Blueberry Rice Pudding

When I use brown rice for dinner, I save out a cup, and make rice pudding the next day.  This one is made the night before, refrigerated, and served cold.  It is luscious with the wonderful produce of summer.  You can rewarm in the microwave if you wish.

Ah, the peaches are wonderful this time of year, and this is a great use for them.  Great for dessert as well.  I make it the night before, and serve at room temperature the next morning.

Whole Grain Raspberry Breakfast Bars from Driscoll

I got this recipe from the Driscoll web site: http://www.driscolls.com/recipes/view/2788/Whole-Grain-Raspberry-Breakfast-Bars  They are delicious, easy to make, and kids and adults both love them.  I make them the day before, and just serve at room temperature the next morning.

Caramel Pecan Raspberry Muesli

Muesli is a dish found on European breakfast buffets, particularly in Austria, Germany and the Scandinavian countries.  It is typically served at room temperature.  When made with cream, it is luscious, but insanely high fat and calories.  This version is equally delicious, but very, very good for you as well.  It will stick with you all morning.

Banana Pudding from scratch

Wonderful cool breakfast for hot summer mornings.  It is relatively low fat and low sugar, and much better than anything you will ever get from a pudding box.  Make it in 15 minutes the night before, then all you do in the morning is serve it.

Southern muesli

Muesli is a dish found on European breakfast buffets, particularly in Austria, Germany and the Scandinavian countries.  It is typically served at room temperature.  When made with cream, it is luscious, but insanely high fat and calories.  This version that borrows flavors from the South is equally delicious, but very, very good for you as well.  It will stick with you all morning.
