ACL Berry Parfait

We just got back from an American Cruise Line trip, from Charleston, SC to Amelia Island via the Intracoastal Waterway.  Great fun, we hit springtime with azaleas and dogwood blooming (a real treat for Californians - we don't do seasons).  And great food.  Each morning they had this available, and each morning we ate it.  Scrumptious.

Pigs in a Blanket

You can eat this out of hand.  Better yet, dip it in maple syrup with each bite.  Kids love this one.

Fruit Salad Smoothie

So I had a brunch here, for 12 people, which I had donated to a charity auction.  I made a beautiful fruit salad – berries, apples for crunch, banana for sweetness, random melons and tropical fruits.  My guests ate some, but went for the Dianne Phillips  (www.dianephillips.com ) Amaretto Peach French Toast, Miniature Quiches and Strata found elsewhere in this blog.  So I had a LOT of fruit salad left over.  We ate some with lunch and with dinner, and finally were just tired of it.  So I used it for smoothies for breakfast.  Will work for ANY fruit mixture at all, although some might give you a weird color.

Banana Pudding from scratch

Wonderful cool breakfast for hot summer mornings.  It is relatively low fat and low sugar, and much better than anything you will ever get from a pudding box.  Make it in 15 minutes the night before, then all you do in the morning is serve it.

Scotch Eggs

Hearty, very filling.  I first had these, not too surprisingly, in Scotland.  It is bar food there, but I love it for breakfast.

Pineapple Coconut Macadamia Nut Energy Bars

A taste of the islands!  These are very good for you, incredibly tasty, and a great snack to grab on the go (although we ARE trying to have breakfast with the family).   They have fruit, fiber and protein, although not particularly low calorie.  AND they are easy to make the night before.

Potato Pancakes

These are hearty and very tasty.  Make mashed potatoes the night before for dinner, then plan for some leftovers for this yummy treat a couple of days later.

Easy Coconut Pie

Stay with me here – milk, eggs, fiber.  This is easy, yummy, a bit more sugar than I usually want, but definitely a winner.

Butter onion quesadilla

If you like onions at all, you will really, really like this.   Make the onions to top a steak or fish the night before, then save some for this a couple of mornings later.

Hash - NOT A recipe, just an idea

This is super quick, very good, and will sustain you through the morning.  It is not for those concerned about fat or sodium, but we have it once in a while anyhow.  I use the Hormel Mary Kitchen's roast beef hash, and occasionally poach an egg to put on top.  Directions are open can, saute until brown and crispy in places, serve.
