Baked Quesadillas

Easy to prepare, can be very simple or very complex, depending on what the kids like, and what the adults want.  Very quick.

Follow this link to the recipe:

Oven Quesadillas
• 4 tortillas, 8’ – 10”
• 3 ounces (3/4 cup) or more grated cheddar cheese
• 1 chopped tomato
• 1 small avocado, chopped
• ¼ cup chopped ham

Night before:
Set the oven to preheat to 500 degrees

Next morning:
Lay 4 tortillas flat on cookie sheet
Divide ingredients evenly among the 4 tortillas, putting on ½ of each tortilla
Fold the other half over, making a half moon shape.  Make sure quesadillas don't overlap one another.
Put cookie sheet into oven for 3 minutes, take out and turn tortillas over, the put in over for another 3 minutes.
Ingredients should be bubbling, and tortillas browned.

NOTES:
• Add cilantro, bacon, scrambled eggs, refried beans, green chiles, and on and on. Make any combination you think would be good – just be sure there is some cheese to hold it together.
