Cheese Grits

I grew up in the South, and grits are a staple there.  You can get them anywhere now, and they are much too good to resist.  These are made simply with water and milk, and cheese added for a savory breakfast dish, full of protein.

Cheese grits
• ¾ cup grits (quick cook - not instant, not original)
• 1 cup milk
• 2 cups water
• ½ tsp salt
• 2 oz shredded cheddar (1/2 cup_

Night before:
Nothing to do

Next morning:
Bring milk and water to a boil. Stir in salt and grits. Lower heat, stir every minute or so.
When the grits have thickened, stir in the cheddar – more to taste if you want.
Once the cheese has melted into the grits, serve on a plate or in a bowl.

NOTES:
• If you forget to stir and the grits start to lump, take a wire whisk and stir vigorously until the lumps are gone.
