ACL Berry Parfait




We just got back from an American Cruise Line trip, from Charleston, SC to Amelia Island via the Intracoastal Waterway.  Great fun, we hit springtime with azaleas and dogwood blooming (a real treat for Californians - we don't do seasons).  And great food.  Each morning they had this available, and each morning we ate it.  Scrumptious.

Nutty Granola





Make this in the evening or on the weekend. Takes 10 minutes or less to stir this together, then an hour to bake.  It is well worth the effort, and makes a LOT of granola.  Very tasty.  I think I will go snack on some now.

Fried Polenta



    

A variation on regular pancakes - you fry slices of chilled polenta, and treat them like pancakes, serving with butter and syrup, or fruit, or whatever else you fancy.  They are perfect for a cold winter day, giving you fuel and warmth to take on the day.

Easy Breakfast Polenta




This is hearty and warm for a winter day.  It is also known by the inelegant name of cornmeal mush, but the Italians co-opted this and called it polenta.  This is enough to serve 4, as well as to have leftovers used for friend polenta - see next week's posting.

Peach Blueberry Rice Pudding



When I use brown rice for dinner, I save out a cup, and make rice pudding the next day.  This one is made the night before, refrigerated, and served cold.  It is luscious with the wonderful produce of summer.  You can rewarm in the microwave if you wish.

Red Mill Mighty Fine Hot Cereal


 I recently discovered this gluten free cereal at Whole Foods, and it is wonderful.  Serve it with dried cranberries,  chopped walnuts and maple syrup for a wonderful, hearty, filling breakfast.  If you don't have a source for this, you can order it from: http://www.bobsredmill.com/gf-might-tasty-hot-cereal.html

No real recipe for this, just follow package directions.  I use half milk and half water to cook it.  Yummy!

Title Tropical Cereal Bars



These are very good for you, incredibly tasty, and a great snack to grab on the go (although we ARE trying to have breakfast with the family).   They have fruit, fiber and protein.  AND they are easy to make the night before.  I recently took these with me on a trip to India, and ate them when I felt like a taste from home.
