Granola Bars

Quick, easy, delicious.  And kids just love them - they think they are eating cookies

Follow this link to the recipe:

Granola Bars
  • 1/4 cup honey or maple syrup
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • ½ cup peanut butter
  • ½ cup pecans, walnuts, almonds or mixed nuts, chopped
  • 3 1/2 cups granola

Night before:
Mix honey, sugar and cinnamon in a large bowl that is microwave safe.    Microwave on high for 2 minutes, or until boils vigorously.  Stir in peanut butter until the mixture is smooth.

Pour in granola and nuts, and stir until coated.  Grease 9 inch by 12 inch pan, then press mixture into the pan.    Cut into bars.

Next morning:
  Serve

NOTES:
·         These are great for afternoon snacks or lunch boxes as well
·         If you are short on granola (as I was)  mix in flakes or Cheerios or other non-sweetened cereal
