Grits Souffle


Real grits souffle has separated eggs, and lots of whipping and is a great deal of trouble.  This gives you the same taste in no time at all.  Innately quick, lots of protein and carbohydrates in one dish. And did I mention delicious?

Grits Souffle

¾ cup quick cook (5 minutes) grits
1 ½ cups water
1 ½ cups milk
¼ tsp salt
2/3 cup shredded cheddar
2 eggs, well beaten

Night before:
  
 Nothing to do

Next morning:
Bring water and milk to a boil.  Stir in grits, and bring to a boil again.  Turn to simmer, cook for 5 minutes,stirring occasionally to prevent lumps.  Stir in cheese, then immediately pour eggs slowly into grits while mixing vigorously.  Turn off heat, let sit for 1 minute or more, then serve.

NOTES:
Add crumbled bacon or chopped chives for additional flavor.
Substitute crumbled feta, cream cheese, or any other cheese that you like.  I used Havarti once, and it was excellent!
