There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

* Bread machine
* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Nutty Granola





Make this in the evening or on the weekend. Takes 10 minutes or less to stir this together, then an hour to bake.  It is well worth the effort, and makes a LOT of granola.  Very tasty.  I think I will go snack on some now.

Nutty Granola

  • 6 cups oatmeal - old fashioned or quick
  • 1 cup wheat germ
  •  ½ cup corn meal
  • ½ cup whole wheat flour
  • 1 cup finely chopped walnuts
  • 2 cups slivered almonds
  • 1/3 cup water
  • 2/3 cup vegetable oil
  • 1 cup honey


Night before:
  Preheat oven to 3000 F. Mix dry ingredients together in a large bowl. Mix wet ingredients in another bowl, and blend well. Pour wet over dry and stir until all is coated.  

 Spread out in about a half inch layer on one or two cookie sheets, non-stick, or lined with parchment paper.    Bake on cookie sheets for 45 to 60 minutes, until the mixture is golden brown.  Cool completely, then either break up into small pieces, or into larger chunks for snacking.  Store in airtight containers.

Next morning:

Serve with milk, yogurt or fruit, or all of above.


NOTES:

  • This makes a ton of granola, but it is good, and keeps a long time
  •  If you wish, stir in 2 cups of raisins or other dried fruit, chopped, after removing from the oven.
