There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

* Griddle that spans two burners on your stove

Taco Scrambled Eggs




Last night we had tacos - a family favorite.  There was just a little bit of everything left - meat, veggies, cheese.  Not enough to do anything with, and the avocados were browning a bit.  So I tossed it all in a nonstick skillet this morning, lettuce and all, sauteed it briefly, then poured 3 beaten eggs over it.  Yummy!

  • 1 cup or so of leftover taco fixings
  • 3 or 4 eggs, beaten


Night before:
  
Have tacos for dinner: Saute hamburger with chili powder, garlic powder and a bit of salt and pepper.  Chop tomatoes, onions, avocado, lettuce, and put into individual dishes or use a lazy susan.  Put cheese, sour cream and salsa each in their own bowl too.  Heat flour tortillas  in the microwave, or warm each, one at a time,  in a dry hot frying pan.  Everyone gets to fill his/her tortilla.   Put anything that is left over into a container. 

Next morning:

Saute the fixings in a nonstick skillet until warm.  Pour beaten eggs over them, then cook until eggs are set.  Serve

NOTES:

This would be good served in a warmed tortilla, with salsa.
