There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

* Bread machine
* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Butter Onion and Pepper Quesadillas




I am on a use-dinner-leftovers-for-breakfast kick.  I sauteed, in butter, onions and red, orange and yellow peppers to put over steak, and held some out for this morning.   These quesadillas are so quick and easy to make, and can be varied to your taste.

Butter Onion and Pepper Quesadillas

  • 4 tortillas, 8’ – 10”
  • 3 ounces (3/4 cup) or more grated pepper jack cheese
  • 1 cup, more or less, of sauteed onions and peppers
  • Salsa for topping


Night before:
Enjoy dinner.
Set the oven to preheat to 500 degrees

Next morning:
Lay 4 tortillas flat on cookie sheet
Divide ingredients evenly among the 4 tortillas, putting on only ½ of each tortilla
Fold the other half over, making a half moon shape.  Make sure quesadillas don't overlap one another.
Put cookie sheet into oven for 3 minutes, take out and turn tortillas over, the put in over for another 3 minutes.
Ingredients should be bubbling, and tortillas browned.

NOTES:

  • Adding ham or bacon is a nice variation
