Scandinavian Oatmeal Pancakes
- 2 cups rolled oats
- 2 cups buttermilk
- 112 cup flour
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 eggs, beaten
- 1/4 cup melted butter
Night before:
Combine
the oats and buttermilk in
a bowl and mix well. Cover and put in the
refrigerator overnight. Mix the flour,
sugar, baking powder, baking soda in a second bowl.
In the morning:
Mix the flour
mixture into the oat mixture, then add the eggs and melted butter, stirring
until well mixed.
Pour the desired amount
of
batter onto a hot griddle, cook until brown on
both sides, turning once. Serve immediately.
Notes:

Serve these pancakes dusted with cinnamon
sugar or spread
with honey.
·
Good with grated of apple or blueberries
added before baking.
