* Griddle that spans two burners on your stove

Tomato Cheese Soup for Breakfast


This is most welcome on a cold winter day.  And a snap to make.

Tomato Cheese Soup for Breakfast

  •  Tomato Soup for 4 – I like Trader Joe’s Organic Tomato and Roasted Red Pepper, or Organic Creamy Tomato Soup.  Comes in a box, serves 4.
  • 1 cup sharp cheddar cheese

Night before:
    Nothing to do  


Next morning:
  Heat soup. 
  Add cheese to hot soup and stir until melted.
  Serve with saltines or toasted whole wheat bread. (opt)



NOTES:
·         I sometimes “make” cream of tomato soup, that is incredibly tasty, low calorie, and very filling.  Take one jar of low fat pasta sauce (32 ounces or so) and throw in blender with 8 ounces silken soft tofu.  Blend until smooth.  Heat.  Eat.  People rave about it – I try to avoid giving out the recipe because it makes me feel like a fake cook.  But … people like it.
