Cheese, honey and fig French toast


Warm, runny cheese, sweet, luscious sweet fresh figs and holds you all morning.

Cheese, honey and fig French toast sandwich

  • 8 slices whole wheat bread
  • 8 ripe figs
  • 4 ounces cream cheese, or more to taste
  • 4 T honey
  • 3 eggs
  • ½ cup milk
  • 2  tsp sugar
  • ¼ tsp cinnamon
  • ½ tsp vanilla

Night before:
  Grease 8” x 8” pan
  Spread cream cheese on 4 of the bread slices, the put in pan, cheese side up.
  Slice figs, and cover cream cheese with figs.
  Take other 4 slices of bread and spread with honey, and put honey side down, over 4 slices in pan.  Press firmly to seat.
  Whisk together remaining ingredients, and pour evenly over the sandwiches.
  Cover and refrigerate overnight.
  Set oven to preheat to 375 degrees about 15 minutes before you get up
  
Next morning:
  Uncover pan and put into preheated oven.
  Bake 25 minutes until golden brown.
  Serve.

NOTES:
·         For a totally different taste, substitute peanut butter for the cream cheese, and bananas for the figs.
·         Try strawberries if figs are not in season.  Or blueberries.  Tried peaches once – way too juicy!
