Pigs in a Blanket

You can eat this out of hand.  Better yet, dip it in maple syrup with each bite.  Kids love this one.

Follow this link to the recipe:

Pigs in a Blanket

1/3  cup yellow cornmeal
1  cup Bisquick or other baking mix
1/2 tsp salt
1 cup buttermilk (or 1 cup minus 2T  milk)
2 eggs, lightly beaten
2 tablespoons olive oil
8 cooked breakfast sausage links
maple syrup for serving

Night before:
Measure and mix Bisquick, cornmeal and salt in a bowl
Measure and mix buttermilk, eggs and oil and put in refrigerator overnight
Cook sausage if uncooked.

Next morning:
Preheat griddle or frying pan.
Pour wet ingredients into dry, and mix until all is barely moistened.  Do not overstir.
Grease griddle if needed, then pour batter, about 1/4 cup at a time, and cook pancakes until lightly browned on both sides.
Pour some maple syrup into small bowls for dipping at the table.
Fold a sausage into each pancake,  serve.
