There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

* Bread machine
* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Baked Frittata



Easy to make in a blender, then bake while you shower.

Baked Frittata

1¾ cups milk
2 eggs
1 cup cheese of your choice – Monterey Jack works well
1¾ cups flour
½ tsp salt
½ tsp Italian mixed herbs, or oregano
Pepper to taste
¼ cup Parmesan to sprinkle on top

Night before:
  Put all but Parmesan in a blender  in the order listed; blend until smooth, pour into a container and put in refrigerator overnight (I tried leaving it in the blender overnight, and half of it dribbled out.  What a mess!)
  Set oven to come on in the morning at 400 degrees
  Grease a 9 inch pie dish

Next morning:
  Pour mixture into prepared pie dish, sprinkle Parmesan on top and bake 30 minutes or until set and lightly browned.


NOTES:
·         Before pouring into pan, put in pan crisp bacon pieces, crumbled cooked sausage, sautéed onions, sautéed mushrooms, cut cooked asparagus ,  more cheese or whatever else takes your fancy.  Apples or pears would work too.
