Egg in a Basket

Quick and easy – make one for each person.  Kids seem to really like this one.

Follow this link to the recipe:

Egg in a Basket

  • Slice of whole wheat bread
  • 1 tsp butter, more or less
  •  1T cheddar cheese
  • 1T chopped ham or bacon or tomato or mix
  •  1 egg
·         Salt and pepper to taste

Night before:
Take crust off bread, and roll flat with a rolling pin.
Butter both sides of bread lightly, then press into custard cup or full size muffin tin
Sprinkle cheese into the cup, plus any other additives
  Cover and put into refrigerator
Preset oven to come on in the morning at 375 degrees

Next morning:
Take bread baskets from the refrigerator, the break egg into each basket.
Bake for 15 – 18 minutes, until bread browns slightly, and eggs appear set.
 Serve.

NOTES:
·         A meal in one.  Experiment with other things to add to the cup – mushrooms, onions, feta, scallions, chives, and more
