Apple cheese muffins



Quick to assemble in the morning.  Scrumptious, high protein muffins with a fruit serving as well.

Apple cheese muffins

  •  1 ¼ cup flour
  •  ½ cup whole wheat flour
  • ½ cup rolled oats
  • ½ cup packed brown sugar
  • ¼ cup shredded sharp cheddar cheese
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¾ cup plain yogurt
  • ½ cup light olive oil
  • 2 eggs
  • 1 ½ cups chopped apples with peel, roughly 2 medium apples
Night before:
  Thoroughly mix first  ingredients in a bowl.   Cover and leave out
  Mix yogurt, oil and eggs in another bowl; stir in apples; cover and put in the refrigerator.
  Grease, or put muffin papers in, 12 muffin cups.
  Set oven to preheat in the morning, at 375 degrees.

Next morning:
Pour wet ingredients into dry ingredients, and stir until just mixed.
Spoon into prepared muffin pan
Bake 20 minutes, until muffins are lightly browned.

NOTES:
·         This recipe can easily be doubled. 
·         Chopped pecans are a good addition to this as well – about a half cup is good, and will increase the number of muffins to 14 or 15.
