There are a few gadgets that help with quick breakfasts. You can make do without any of these, but it may take more time, which is what we are trying to save here!

* Bread machine
* Oven you can set to turn on at a specific time
* Griddle that spans two burners on your stove
* Toaster oven
* Blender
* Microwave
* Food Processor

Fried fish scrambled eggs


Doggie bag from a fish restaurant?  Use the leftovers the next morning.

Fried fish scrambled eggs

  • Four eggs
  •  3 or 4 ounces left over fried fish
  • ¼ cup chopped onion
  • 2T milk
  • Pinch of salt

Night before:
Save a bit of fish out from your dinner


Next morning:
Saute onions in a bit of butter or olive oil in a non-stick pan.
Scramble the eggs with the milk and salt.
Add the fish to the pan and stir fry for 30 seconds, then add the eggs and cook until set.

NOTES:
I use a nifty onion chopper, called the alligator, which is a chopping tool that really works.  I have tried dozens that don’t.  So I chop a whole onion, then put the remainder, after I measure out ¼ cup, in a container in the veggie drawer, to use when I need it.  You can find an alligator here, at my favorite cookware store here in San Diego, or online elsewhere, I am sure.   https://www.discountcooking.com/shop/product.php?productid=4388&cat=0&page=1
