Dill Feta Scrambled Egg Pita
- Four pitas
- Six eggs
- 1 tsp dried or fresh dill
- ½ cup feta, crumbled
- Salt and pepper to taste
Night before:
None needed
Next morning:
Microwave pitas for 1 minute, or put
in toaster oven to warm. Cut in half and
open to be ready for eggs
Preheat nonstick pan, and add 1tsp
butter or oil. Beat eggs with dill and
2T water or milk, and pour into the pan, stirring until soft set. Stir in cheese, cook for another minute, then
divide among the pitas.
Serve.
NOTES:
- Try other cheeses, or other herbs. Or both!
